From its very first edition, this festival established a standard of culinary excellence that promises to surprise even more this year. The previous edition left us with legendary moments, such as the ritual of the 80-kilo smoked pig, served directly from the embers, and a masterclass in Texas-style smoking featuring Pitmaker’s slow-cooked Black Angus brisket.
For 2026, the promise is to maintain that vibrant fusion of talent that defines Velas Vallarta: the impeccable technique of Michelin-starred chefs—as seen with Nahúm Velasco and his signature cuisine—blended with the rustic authenticity of northern grilling and coastal cooking.
