Ingredients
1 oz. creme de cassis
4 1/2 oz. champagne
1 tbsp. egg white
1 oz raspberry syrup
Fresh raspberries
Preparation
For the raspberry foam:
- In a foam siphon, add the egg white and raspberry syrup.
- Close the siphon and shake vigorously to mix the ingredients.
- Charge the siphon with a foam gas capsule.
- Shake the siphon again and let it rest in the refrigerator for at least 30 minutes before incorporating it into the drink.
For the Kir Royale:
- Pour the creme de cassis into a champagne flute.
- Fill the flute with champagne almost to the top.
- Gently shake the foam siphon and spray the raspberry foam over the champagne in the flute, creating a floating layer.
- Decorate with fresh raspberries on the rim of the flute, if desired.
- Serve the cocktail cold and enjoy your raspberry Kir Royale.

30 ml herbal liquor
5 oz tonic water

50 ml water
2 oz simple syrup
2 sheets of unflavored gelatin
Preparation
For the blueberry foam:
- Hydrate the gelatin sheets in cold water.
- Heat the blueberry puree, water, and simple syrup.
- Add the gelatin sheets and mix until dissolved.
- Cool the mixture.
- Pour into the siphon and close it.
- Charge the siphon with a gas capsule (N2O).
- Shake the siphon and let it rest in the refrigerator.
- Shake again before incorporating it into the drink.
